Spinach Quiche Squares

½ cup flour
½ tsp. salt
½ tsp. baking powder
2 eggs well beaten
½ cup milk
3 Tbsp. butter, melted
½ onion, minced or 1 Tbsp. dried onion flakes, softened in milk
8 oz. sharp Cheddar cheese, grated
1 pkg. frozen chopped spinach, thawed and drained

Preheat the oven to 350o. Mix flour, salt and baking powder. Add beaten eggs, milk and butter. Stir. Add other ingredients and mix well. Spread in a 13x9x2 inch pan and bake for 30-35 minutes. Cool and cut into bite-sized squares.

Note: These can be frozen and reheated.
