Crunchy Cracked Wheat Bread

Yield: 2 large or 4 small loaves

2 cups boiling water
2 cups cracked wheat
½ cup brown sugar or honey
2 Tbsp. butter
1 Tbsp. salt
2 packages dry yeast
½ cup warm water
5 to 5½ cups white flour

In a large bowl, combine boiling water, wheat, sugar, butter and salt. Stir yeast into warm water. When wheat mixture is slightly cooled, add yeast, then beat in 4 cups flour. Knead in remaining 1 to 1½ cups flour to obtain a nonsticky consistency. Knead for about 10 minutes, until dough is smooth. Place dough in a large oiled bowl; cover and let rise until double in volume (about 1½ hours). Shape dough into 2 large or 4 small loaves. Place on oiled baking sheets and let rise for 45 minutes. Bake small loaves for 20 minutes; large loaves for 30 minutes at 400o.
