Poppy Seed Lemon Bread
For Goodness Taste The Junior League of Rochester Yield: 1 loaf ⅔ cup plus 1 Tbsp. sugar 2 eggs ½ cup milk ½ cup butter, melted and cooled 1 Tbsp. lemon extract 1½ cups flour 1 tsp. baking soda 1 tsp. baking powder ½ tsp. salt 3½ Tbsp. poppy seeds In large bowl, beat sugar and eggs until light and fluffy. Slowly add milk, butter and lemon extract, continuing to mix. Sift together flour, baking soda, baking powder and salt, then add to egg mixture. Add poppy seeds. Pour into greased and floured 4 x 7½-inch loaf pan. Bake for 55 minutes or until lightly browned at 325o. |
