Orange Bread

Yield: 1 loaf

2 Tbsp. shortening
1 tsp. vanilla
1 beaten egg
1/4 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 cup sugar
1/2 cup nuts, chopped
2 cups flour
1 cup raisins or dates
1 medium orange

Place juice of orange in 1 cup measure and fill with boiling water. Grind rind coarsely with raisins and add to juice. Stir in shortening, vanilla and egg. Mix dry ingredients together and add. Beat and add nuts. Bake at 350o for 1 hour. Cool in the pan.
