Jiffy Devil's Food Cake
Betty Keith

Sift twice into ungreased 9-inch square baking pan:

1½ cups sifted cake flour
1 cup sugar
3 Tbsp. cocoa
1 tsp. baking soda
½ tsp. salt

Make 3 depressions. Into one pour ⅓ cup cooking oil. In the next 1 tablespoon vinegar, in the third 1 teaspoon vanilla. Over all pour 1 cup cold water. Mix thoroughly with a fork. Bake at 350o for 30 minutes. This cake won't turn out of the pan but it is very good and super quick.

Betty Keith was the wife of the instumental music teacher and band director in high school and the mother of Carol, our flower girl. She was considered a very good cook and she sent me off to married life with many recipes, including this one.
