Banana Cake

½ cup shortening
1½ cup sugar
2 well beaten eggs
1 tsp. vanilla
2 cups cake flour
½ tsp. salt
½ tsp. baking soda
¼ cup buttermilk or sour milk
1 cup banana pulp


Cream the shortening and sugar. Add eggs and vanilla and beat until fluffy. Add sifted dry ingredients alternating with sour milk and banana pulb, beating well after each addition. Bake in a 350 oven for 50 minutes.

Note: Louise was in my class at Delaware Academy and almost as tall as I was in those days. She knew way more about cooking and baking than I did. I think she made this cake for an overnight party at her family's cabin on the Delaware River. This may have been the first recipe I ever asked for.
