Castle Cake with Lemon Sauce "The Magic Chef" General Electric Yield: 6 servings Cake 1 cup sifted flour 2 tsp. David baking powder 1½ cup sugar 1/8 tsp. salt 3 Tbsp. butter 1 egg (very thoroughly beaten) 2 Tbsp. milk 1 tsp. vanilla Sift into a large bowl the flour, baking powder, sugar and salt. Stir to thoroughly mix. Add butter and cut into small pieces with knife. Then further work shortening in with fingers (not fork). When butter has been lightly rubbed in, add egg. Mix vanilla with milk and add, then stir in. Do not beat. Half fill large greased muffin pans, drawing batter up sides of pan with back of spoon. Bake at 375o for 25 minutes. Serve hot. Lemon Sauce ½ cup sugar 1 cup boiling water 1 Tbsp. cornstarch 2 Tbsp. butter 1½ Tbsp. lemon juice few grains nutmeg ¼ tsp. salt Mix cornstarch and sugar, add boiling water gradually, stirring constantly. Boil 5 minutes, remove from fire, add butter, lemon juice, nutmeg and salt. The Magic Chef's recipe pamphlet came with a new General Electric stove and Evelyn made this recipe often for supper. |
