Baked Cranberries

Yield: 8 servings

2 cups raw cranberries
1½ cups sugar
Butter casserole. Add raw cranberries. Sprinkle with sugar. Cover tightly. Bake at 375o. Stir once. Bake until sugar has dissolved, about 45 minutes.

Note: The Committee, forever annonymous, not only put together the very good Philadelphia Orchestra Cookbook, but they also contributed quite a few recipes, the great majority of which are well worth trying. Usually fairly easy, their recipes are often big enough to feed a crowd.


Hollandaise Sauce
Fannie Farmer Cookbook
Yield: about 1 cup

3 egg yolks
2 Tbsp. lemon juice or mild vinegar
½ cup butter, melted
2 Tbsp. hot water
¼ tsp. salt
Few grains cayenne
Put the egg yolks in a smll heavy saucepan or double boiler top. Beat with a wooden spoon or wire whisk until smooth but not fluffy. Add the remaining ingredients. Set the pan over very low heat or over hot water and beat until the sauce begins to thicken (about 5 minutes). The sauce will be thicker as it cools.

This is the only Hollandaise sauce I've ever made. I always use a double boiler and it always works. My copy of the Fannie Farmer Cookbook was a gift to the collection from Don Spillman who, when he was still a bachelor, often used to spend weekends with us at the lake. He had very carefully created a cover from cardboard and a reinforced spine for what was originally a paper-back book. For many years it survived frequent use.
