Celery Salad with Capers and Dill

Yield: 6 servings

1 Tbsp. fresh lemon juice
1 large garlic clove or 2 medium, minced
Salt
Freshly ground black pepper
2 Tbsp. extra-virgin olive oil
2 Tbsp. chopped fresh dill
2 Tbsp. drained capers, rinsed and drained again
2 lbs. celery

Place the lemon juice, garlic, 1/8 teaspoon salt and some pepper in a small bowl. Whisk to dissolve the salt. Add the oil in a stream, whisking until homogenous. Stir in the dill and capers and set aside to let the flavors develop. Wash and trim the celery stalks. Cut into ½-inch slices on an angle. Place in a steamer basket and steam for 5 to 7 minutes, or until the celery is tender yet retains some crispness. Transfer to a bowl. Correct the seasonings of the dressing, adding more salt and pepper if needed. Pour the dressing over the celery. Mix thoroughly and let cool to room temperature. Cover and refrigerate until chilled, tossing occasionally, and marinate 1 to 2 hours. Serve chilled.
