Homemade Mayonnaise
Yield: about 2 cups

1 tsp. dry mustard
1 tsp. salt
Pinch of black pepper
3 Tbsp. fresh lemon juice
1 large egg
1¼ cups vegetable oil
¾ cup olive oil
Dash of Tabasco (optional)

Place mustard, salt, pepper, lemon juice, and egg in a food processor. With the motor running, pour oils in a slow, steady stream through the feed tube until all has been emulsified. Stir in Tabasco.
