Quick Pickled Red Onions

1 medium red onion, sliced and separated into rings
1 Tbsp. olive oil
2 Tbsp. distilled white vinegar
¼ tsp. salt

Mix ingredients together thoroughly and let sit for 5 minutes or more. In a sauté pan heated to medium-high, sauté onipn rings, stirring constantly until all liquid has evaporated.
