Pecan Bars

Yield: about 48 1 x 2 inch bars

the pastry base
1/2 cup butter
1/4 cup sugar
1 egg
1-1/4 cups sifted all-purpose flour
1/8 tsp. salt
1/2 tsp. vanilla

the topping
2 beaten eggs
1-1/2 cups brown sugar
1/2 cup grated coconut
1 cup chopped pecans
2 tbsp. flour
1/2 tsp. salt
1 tsp. vanilla

the finishing touch
1-1/2 cups confectioners' sugar
lemon juice

Cream the butter and sugar. Beat in the egg. Combine flour and salt and add to the butter mixture in about 3 parts. Add the vanilla. Use your hands to spread the dough evenly in a 9 x 12 inch pan. Bake in a 350ooven for 15 minutes. For the topping combine the 2 eggs, brown sugar, coconut, pecans, flour, salt and vanilla and spread on the baked pastry base. Bake in a 350ooven for 25 minutes. When it is cool spread it with confectioners' sugar thinned to a good consistency to spread with lemon juice. Cut when cool.
