Evelyn's Sugar Cookies Evelyn Campbell 2 large cups sugar 1/2 large cup butter 3 eggs 1/2 cup sour cream Large tsp. soda No directions from Evelyn but I remember them as the basis of jelly cookies which were something of a specialty although I'm not sure whose. Both Aunt Margaret and Evelyn made them, not to mention Aunt Minnie Gow in Bovina. The cookies were rolled out. Half were cut with a round cutter and the other half with a doughnut cutter (a cutter with two circles, one inside the other, used for fried cakes - both the circle and the left-over hole were fried and then dredged in sugar - very good). After they were baked and before they were served, home-made current jelly was spread on the bottom cookie so that it showed through when a cookie with a hole was put on top. Very pretty. |
