Coconut Date Balls The Bovina Cookbook Margaret Dibble 1 cup sugar 4 Tbsp. butter 2 eggs, beaten 1 cup dates, cut up fine 2 cups Rice Crispies 1 cup nuts, chopped Shredded coconut Mix sugar, butter, eggs and dates together and put in a teflon-coated frying pan on low heat. Cook until mixture thickens, stirring often (but not very long). Remove from heat and stir in Rice Crispies and nuts. Let mixture cool. In a separte pan spread coconut. Form small balls of the cooled mixture and roll them in the coconut. |
