Lemon Squares
Philadelphia Orchestra Cookbook
Yield: 12 squares

1 cup flour
1/2 cup butter
1 1/4 cup powdered sugar
2 eggs
1 cup granulated sugar
1/2 tsp. baking powder
2 1/2 Tbsp. fresh lemon juice
Dash of salt

Sift flour and powdered sugar into bowl. Blend in butter with fingertips until well mixed. Pat evenly into an 8"x 8" pan. Bake at 350o for 20 minutes. Beat together eggs, granulated sugar, baking powder, lemon juice and salt. Pour over the baked crust and return it to oven for 20 to 25 minutes longer. Cool on rack. Sprinkle with additional powdered sugar and cut in squares.



Ginger Crinkles

Yield: 5 dozen cookies

2/3 cup Wesson oil
1 cup sugar
1 egg
4 Tbsp. molasses
2 cups sifted flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. ginger
1/4 cup sugar

Heat oven to 350o. Mix oil and sugar thoroughly. Add egg and beat well. Stir in molasses. Sift dry ingredients together and add. Drop teaspoons full into 1/4 cup sugar and form into balls. Place on an ungreased cookie sheet 3" apart. Bake for 15 minutes. Remove to a wire rack. Note: These are very good and really easy. If there is any problem with them, it is that they turn out so perfectly round that they look like commercially made cookies.
