Frosted Banana Cookies

Yield: 6 dozen cookies


¾ cup shortening or margarine
¾ cup sugar
1 egg
½ tsp. vanilla extract
2 mashed bananas
¼ tsp. salt
1 tsp. soda
2 cups sifted flour

Frosting
6 Tbsp. brown sugar
4 Tbsp. butter or margarine
4 Tbsp. cream or evaporated milk
confectioner's sugar
½ tsp. vanilla extract

Cream shortening. Add sugar and blend. Add egg, vanilla and bananas. Sift together flour, salt and soda. Place by teaspoons on greased sheet. Bake at 350o for 8 minutes. These brown only on the edges. For frosting: place in pan and bring to boil brown sugar, butter and milk. Remove from heat and add enough powdered sugar to make runny but spreadable. Add one-half teaspoon vanilla. Keep pan over warm water to keep frosting soft. If it gets thick, add a little hot water. Frost cookies while they are warm.
