Peanutbutter Glitter Balls

Yield: about 48 balls


1½ cups peanut butter
½ cup butter, softened
1 1-lb. box confectioners' sugar
1 12-oz. package white chocolate chips
1 Tbsp. vegetable shortening
Edible glitter or colored sugar

In a large bowl, combine peanut butter and butter and mix with an electric mixer until blended. Add confectioner's sugar, ½ cup at a time, blending after each addition. Line a baking sheet with wax paper or foil. Using your hands, shape peanut butter mixture into 1-inch balls. Place on baking sheet and chill until firm, about 1 hour. Place white chocolate and shortening in a large microwave-safe bowl. Microwave, stirring at 30-second intervals, until chocolate is melted and smooth, about 2 minutes. Using a spoon, dip each peanut butter ball into melted chocolate, spooning chocolate over to coat, if necessary. Place on wax paper-lined baking sheet. Once covered, sprinkle with glitter. Chill for 30 minutes.


Note: Yet another cookie for the annual Christmas cookie exchange, and this one doesn't require an oven.
