Brown Sugar Cookies

For the cookie:
1 cup butter
½ cup white sugar
½ cup brown sugar
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. salt
½ tsp. baking soda
½ cup finely ground pecans

For the frosting:
1 cup brown sugar
½ cup cream
1 cup sifted confectionary sugar

Chill dough 20 minutes or more. Flatten with sugared glass 1 teaspoon of dough on ungreased baking sheet. Bake at 350o for 10 to 12 minutes. For frosting, bring brown sugar and cream to boil; boil 4 minutes, stirring. Add other sugar. Frost cookies when cool. Best if frozen first.

Note: Those of the Flints who like "maple" will love these.



Chocolate Meringues

Yield: about 8 dozen

1 6-oz. package semi-sweet chocolate morsels
3 egg whites
1 cup sugar
½ cup graham cracker crumbs
½ tsp. vanilla extract

Preheat the oven to 350o. Melt chocolate morsels over hot (not boiling) water. Remove from hot water and let cool five minutes. Beat the egg whites until stiff but not dry. Gradually add sugar and beat until smooth and glossy. Fold in chocolate, crumbs and vanilla. Drop by level teaspoonfuls onto greased cookie sheets. Bake 15 minutes.
