Date Pinwheels
Better Homes and Gardens Dessert Cookbook

Yield: 5 dozen

½ cup butter
½ cup brown sugar
½ cup granulated sugar
1 egg
½ tsp. vanilla
2 cups sifted enriched flour
½ tsp. soda
½ tsp. salt

Date Filling:
1 lb. pitted dates, cut up
½ sugar
½ cup water
½ cup finely chopped walnuts

Thoroughly cream together butter and sugars. Add egg and vanilla; beat well. Sift together dry ingredients; stir into creamed mixture. Chill. Divide dough in half. On lightly floured surface, roll one part in 12x8-inch rectangle, about ¼ inch thick. Spread half of date filling evenly over dough. Begin at long edge, roll like jelly roll. Repeat with remaining dough. Wrap rolls in waxed paper. Chill several hours. Slice ¼ inch thick. Bake on greased cooky sheet at 400o about 8 minutes.

To make date filling, combine dates, sugar and water in saucepan. Cook and stir till mixture boils and thickens slightly. Cool. Just before using, add finely chopped walnuts.
