Oatmeal Icebox Cookies Aunt Margaret Yield: about 5 doz. cookies 1 cup shortening (i.e. Crisco) 1 cup brown sugar 1 cup white sugar 2 eggs, well beaten 1 tsp. vanilla 1½ cups all purpose flour 1 tsp. baking soda 1 tsp. salt 3 cups quick cooking oats ½ - 1 cup chopped walnuts Cream shortening and sugar thoroughly. Beat in eggs and vanilla. Sift flour, soda and salt and stir into creamed mixture. Mix in oats and nuts. Shape into rolls. Wrap in wax paper. Chill thoroughly. Slice ¼ inch thick, bake on ungreased cooky sheet, 350o, 10 minutes. |
