2 1/4 cups flour (don't sift)
1 cup sugar
2 tsp. baking powder
1/2 cup vegetable oil
2 eggs, beaten slightly
2 tsp. anice, hazelnut or almond extract
3 tbsp.+/- toasted almond slices, chopped, optional

Mix all ingredients together and knead. Divide dough into two parts and shape each into log shapes, about 2 inches wide and 3/4 inch high. Bake on ungreased cookie sheet at 350o for 25 minutes. After 15 minutes turn pan front to back and finish baking, 10 or even 15 minutes longer. Cool about 5 minutes and slice into 3/4 inch bars.

As you can see, these are quick and easy because they don't require a second baking. They also are delicious and keep nicely.
