"S" Cookies (for Sankt Nikolaus, St. Nicholas in German)

1 cup sugar
1 cup salted butter
1/2 tsp. grated lemon rind
1-1/2 Tbsp. (4 1/2 tsp.) lemon juice
9 egg yolks
4 cups all-purpose flour

Beat butter until soft; add sugar gradually while beating. Blend in lemon rind and juice, beat in egg yolks, stir in flour. Chill for 1 hour. Roll dough into 1/4 to 1/2-inch sticks. Brush top with beaten egg. Cut into 4-inch sections. Dip, egg-side, into colored sprinkles. Shape into "S" form and place on baking parchment. Bake in 375o oven for 8 - 12 minutes, depending on width of dough. These can be frozen or shaped into any initial, depending on who is to receive the cookies.
