Mother Flint's Vanilla Ice Cream

Yield: 1 quart

1 quart milk
4 beaten eggs
1 cup sugar
1 Tbsp. vanilla
Pinch of salt

Boil the milk or heat it in a double boiler until a light skin forms. Take off the heat and add the four eggs. Cook, stirring, until it coats a spoon. Take off the heat again and add the sugar, vanilla and salt. Cool and freeze in a crank freezer.

Note: This is the traditional Greystone Family Reunion Clam Bake dessert. It is always made in an old fashioned freezer, cranked until even the strongest can crank no more, then packed, still in the freezer, with more ice and salt and left to ripen until time for dessert. It is light, sweet, and perfect at the end of a clam bake. At the Flint family home in Athens, it must also have been just right for a family with seven children and Hudson River ice close at hand.
