Scampi
The New York Times Menu Cookbook
Thanks to Dave Mactye who made this for us one night at the farm.
Yield: 3-4 servings

½ cup butter
¼ cup olive oil
1 Tbsp. chopped parsley
¾ tsp. dried basil
½ tsp. dried oregano
1 minced garlic clove
¾ tsp. salt
1 lb. fresh large shrimp

Preheat oven to 450o. Melt butter and add olive oil, parsley, basil, oregano, garlic, salt, lemon juice and mix. Peel and devein shrimp. Place in shallow baking pan. Pour sauce over all and bake 3 minutes. Place under broiler 5 minutes to brown.
