Clams Casino Connie Amatruda, Andrew and Vanessa's grandmother Thanks to Papa Yield: 4 servings 1/4 cup olive oil 1/4 cup butter 1 garlic clove, crushed 2 Tbsp. chopped parsley 2 tsp. lemon juice 36 clams 36 small squares of bacon Combine olive oil, butter, garlic, parsley and lemon juice in a small saucepan, cover and cook over low heat until well blended. Open the clams, top each with a tsp. of the mixture and cover each with a small piece of bacon. Cook the clams on hot coals or in an oven at 425o for 8 minutes (about). |
