Roast Rack of Lamb For Goodness Taste Yield: 6 to 8 servings 3 to 4 cloves garlic, minced 2 cups breadcrumbs ¾ cup minced fresh parsley 1 to 2 tsp. salt ½ tsp. pepper ¼ cup Dijon mustard ½ cup olive oil 2 meaty racks of lamb In a small mixing bowl, combine garlic, breadcrumbs, parsley, salt, pepper and mustard. Add olive oil in a stream, beating until mixture forms a paste. Lightly score tops of lamb racks. Spread with mustard mixture; refrigerate until roasting time. Bring to room temperature before roasting. Preheat oven to 375o. Place racks of lamb, meat side up, in roasting pan. Cover rib ends with foil to prevent burning. Bake 40 to 50 minutes for medium rare; longer for well-done chops. |
