Cinnamon-sugared Pecans

Yield: 1 lb.

1 lb. pecans
1 egg white, beaten
½ cup sugar
1 Tbsp. cinnamon
½ tsp. salt

Combine the sugar, cinnamon and salt in a plastic bag. Toss the pecans in the egg white to coat and then in the bag with the sugar mix. Spread on an ungreased baking sheet and bake in a 325o oven for 20 minutes. Remove immediately from baking sheet with spatula; otherwise everything fuses! Store in the refrigerator.

These are staples at the Metropolitan Opera HD broadcasts and anywhere else that Rose-Marie feels a little treat would be welcome.
