Zaatar Almonds and Pistachios Party Nuts Sally Sampson Yield: 2 cups 1 cup lightly toasted whole almonds, blanched or skin on 1 cup lightly toasted shelled pistachio nuts 1 Tbsp. vegetable oil 2 Tbsp. toasted sesame seeds ½ to 1 tsp. kosher salt, to taste 1 tsp. dried Greek oregano 1 tsp. zaatar Pinch of cayenne or freshly ground black pepper Place everything in a medium-size bowl and toss to combine and coat evently Set aside to cool completely before serving. Note: Toast the almonds in a preheated 350o oven for 12 to 15 minutes and the pistachios for 10 to 12 minutes. Toast the sesame seeds by adding to the almonds and pistachios for the last five minutes. Zaatar can be found in most ethnic markets (and Wegmans). It is made up of sesame seeds, sumac, and thyme and is used in the Middle East sprinkled on salads, vegetables, meats and breads. My experience with this recipe which I like, is that the nuts lose flavor after a day or two so serve them soon. |
