Baked Beans

Yield: this is one of several dishes on the menu "for a raft of 16 kids"

3 large (1 pound) cans solid pack baked beans
3 large onions, thin-sliced
1 cup brown sugar
1 Tbsp. dry mustard
½ cup dark molasses
½ cup chili sauce
3 slices bacon, cut into squares

Mix the sugar, mustard, molasses, and chili sauce together. Empty one can of beans into a bean pot. Add ⅓ of the seasonings, 1 of the onions and another can of beans. Continue the layering until all the ingredients have been used, and cover the top with the bacon. Bake, uncovered, at 350o for 1½ to 2 hours. If you use a different, juicier band of beans, drain off the liquid before adding the other ingredients.

Note: "Presumably for the kids, but you'll be feeding these to adults at picnics all summer when you find out how good they are." On the other hand I once included them on a buffet on Canandaigua Lake to someone who said, without trying them, "I can't understand why anyone would ever serve baked beans." So you never know.
