White Bean Salad with Lemon and Parsley

19-oz. can small white beans, rinsed and drained (Breat Northern are the best beans for this salad)
1 medium cucumber, diced
4 scallions, thinly sliced
¼ cup chopped flat-leaf parsley
2 Tbsp. fresh lemon juice
4 tsp. extra virgin olive oil
1 tsp. chopped mint
1 garlic clove, crushed
½ tsp. salt


In a medium bowl combine the beans with everything else. Refrigerate, covered, untill chilled (at least one hour).
