Lobscouse Eating Well via Annette Pedroze Thanks to Margaret 1 Tbsp. olive oil 1 medium onion, chopped fine 1 tsp.garlic, minced (up to 1 Tbsp.) 3 stalks of celery 4 carrots (or 5), peeled and chopped Turkey ham, chopped (amount to taste) or you can use Canadian bacon or any other meat you choose 3 potatoes, peeled and chopped 2 bay leaves Dried oregano, to taste White pepper, to taste Fresh or dried basil, to taste 1 bag of split peas, soaked (if desired) 4 cups chicken stock 4 cups water In a stock pot, sauté onion and garlic in oil. Layer on top in this order: celery, carrots, meat, potatoes, seasonings, split peas. Pour on top chicken stock and water. Cover and simmer 2½ - 3 hours. Don't stir while cooking. Stir when ready to serve. |
