Baked Sweet Potato Fries Democrat and Chronicle Yield: 4 servings 2 large sweet potatoes 2 Tbsp. olive oil ½ tsp. salt ¼ tsp. pepper ¼ tsp. cayenne pepper, optional Preheat oven to 400o. Spray a baking sheet with nonstick vegetable cooking spray (or line with parchment paper). Peel potatoes, then cut into ¼ by 2-inch strips. Place strips in plastic food bag and drizzle with olive oil. Seal bag and shake to coat potatoes evenly. Spread in single layer on prepared baking sheet. Bake 15 minutes; stir gently, turning strips over. Bake 5 to 10 minutes or until lightly brown. Season hot potatoes with salt, pepper and cayenne. Note: These are not only good but according to the Democrat and Chronicle they are also one of the most nutrient-dense vegetables in the produce section. Sweet potatoes are high in vitamins A and C, have a good amount of vitamin B and are rich in fiber. They are also loaded wtih beta carotene, an antioxidant converted by the body into vitamin A. |
