Cinnamon Stars Applehood and Motherpie Sibley's Bakery Department Yield: 16 - 20 squares 1 lb. almond paste 1 cup sugar ½ Tbsp. cinnamon 1½ Tbsp. cocoa powder 2½ to 3 cups chocolate cake crumbs pinch of salt pinch of ammonia powder 1 whole egg 1 egg white Mix the almond paste, sugar, cinnamon, and cocoa powder. Add chocolate crumbs, salt, ammonia powder, whole egg, and egg white. Rest dough in refrigerator overnight. Roll out dough ¼-inch thick on a floured board. Cut out stars. Place on greased cookie sheet and sprinkle with sugar. Bake at 350o for 15 to 20 minutes. Be careful not to overbake, otherwise they will become hard. Notes: Ammonium carbonate, or hartshorn, is available at drug stores (and Cooks World in Rochester). Baking soda can be substituted but is not as good. Use Little Chocolate Cake Cookies for the cake crumbs. The Junior League editors of Applehood and Motherpie called Sibley's Bakery Department just before the store closed for good and asked for the recipe for these chewy,almond flavored cookies which were sold by the dozens every Christmas. |
